Perfect Memorial Day Weekend Redskin Potato Salad With Bacon

IMG_1293Everyone has cook outs on Memorial Day weekend.  One of the most popular side dishes is potato salad.  Here is my version which is kicked up with bacon.

2 lbs of red skin potatoes
6 slices bacon cooked and crushed into bacon bits
3 hard boiled eggs finely chopped
1/2 cup  green onions chopped
1/2 cup celery chopped
1/2 cup sour creme
1/2 cup mayonaise
2 tbs parsley
4 tbs salt
2 tbs pepper
1 pinch of paprika
Place potatoes in large pot, cover in water and boil until potatoes are soft, approximately 15 to 20 minutes.  Drain potatoes and let cool.   Dice potatoes into small chenks.   In large mixing bowl,  add potatoes, bacon bits, hard boiled eggs and mix well together.  In seperate bowl add sour creme, mayonaise, parsley, salt, pepper.  Add the dressing to the potato mixture and combine all the ingredients.  Sprinkle the top with paprika for presentation.  Refrigerate the potato salad until cold.  CHEERS !!
