Mark’s Post Chicken Barbecue Chicken Salad

IMG_0975What to do with left over chicken after a barbecue, try my chicken salad recipe.  There are numerous recipes for chicken salad with grapes.  I say no to grapes but yes to apples in chicken salad.  Please keep in mind that measurements depend on the amount of chicken you use:  Here is my favorite way to prepare chicken salad with left over barbecued chicken:

Ingredients:
 
2 cups of chicken finely cut into cubes (skin removed)
2 stalks celery finely chopped
1/4 of a medium onion finely chopped (green onions work great too)
1 small apple peeled and cored finely chopped
1/4 cup mayonnaise
4 tsb sour creme
1/2 tsb dill
1/2 tsb brown sugar (yes I know I use brown sugar in almost everything)
1/2 tsb lemon juice
salt/pepper to taste
 
Directions:
 
 In large mixing bowl combine chicken, celery, onion and apple.  In seperate bowl combine mayonnaise, sour creme, brown sugar, dill, lemon juice and salt/pepper.  Combine the dressing with the chicken mixture until mixed together well.  Let sit in refrigerator until chilled.  You now have something delicious, CHEERS !!!!
 

Mad Mark’s Fried Cabbage

IMG_0974I need a good side dish to go with chicken so I put my culinary imagination to work and came up with this awesome fried cabbage recipe.  I wanted to stay away from some traditional ingredients you find in fried cabbage like wine and vinegar.  It turned out awesome, here it is:

Ingredients:
 
1 head of cabbage chopped into bite size pieces
1 medium onion finely chopped
2 carrots peeled and finely chopped
4 pieces of bacon
4 tbs sour creme
4 squirts ketchup
salt/pepper
1 tbs brown sugar
4 tbs olive oil
 
Directions:
 
Before preparing anything place cabbage in mixing bowl and shake salt on cabbage. In large skillet fry bacon until crisp, remove and chop into bacon bits but leave the fat.  Add onion and carrots and cook until tender, approximately 5 minutes.  Add sour creme, ketchup and brown sugar and simmer for approximately 2 minutes.  Add some olive oil to the pan approximately 1/4 cup.  Now add the cabbage and mix together very well.  Let simmer approximately 30 minutes until the cabbage becomes soft and cooked.  You now have an outstanding side dish, CHEERS !!!
 

Sweet Potato Pudding

Looking for a great side dish.  Try my sweet potato pudding.  It’s simple and goes with just about any entree.

Ingredients:
 
2 1/2 cups of sweet potatos mashed
1/2 cup brown sugar
4 eggs beaten
1/2 cup milk
2 tbs butter melted
1 tbs vanilla extract
1 tbs corn syrup
2 tbs rum
1/2 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tbs kosher salt
 
In large mixing bowl  mix together all ingredients until smooth.  Pour the mixture into a baking dish.  Sprinkle additional brown sugar and cinnamon on top.  Place in oven at 350 degree for approximately 30 minutes.  CHEERS !!!
 

World’s Greatest Cole Slaw Recipe

Looking for an amazing side dish, try my world’s greatest cole slaw recipe.  I take traditional slaw and add a few different ingredients which makes it outstanding !!

Ingredients:
 
1 package of shredded cabbage and carrots
1/4 cup mayonnaise
1/4 cup sour creme
3 tbs sweet pickle relish
1 tbs sugar
1 tbs white vinegar
1/4 ground mustard
1/2 tbs celery seed
1/2 tbs salt
1/4 tbs pepper
 
Directions:
 
In mixing bowl wisk together all of the dressing ingredients,  add the shredded cabbage and carrots and mix well..  It’s best to let sit at least an hour in the refrigerator, Cheers !!!
 

Colombian Red Beans

IMG_0928Looking for a great side dish, this Colombian Red Beans are the most awesome beans I have ever had.  It’s best to use kidney beans but any kind of bean will work.

Ingredients:
 
4 slices of bacon
1 tomato chopped
1 bunch of scallions chopped (white and green parts)
1 large (32 oz.) can of kidney beans
1 tbs of sugar or 1 packet of splenda
1/2 cup of water
1 tsb of ground cumin
2 chicken bouillon cubes
3 tbs fresh chopped cilantro
 
Saute bacon until crisp.  Remove bacon and chop into bacon bits.  Do not get rid of the bacon fat (pork fat rules).   In the bacon fat add scallions, tomatoes, and cumin.  Saute until soft, approximately 5 minutes.  Add the beans including the liquid, sugar, water and bouillon.  Simmer for about 10 minutes until the water has evaporated and the beans have thickened.  Add cilantro, and bacon bits and serve with rice or eat them straight up, Cheers !!!
 
 

Beer Dip

Looking for a great dip for the munchies or a party, try my beer dip, it’s so easy !!

Ingredients
 
9 oz beer (drink the remainng 3 oz)
16 oz philadelphia creme cheese
2 cups shredded cheese
1 package of ranch dressing mix
 
Directions:
 
Combine creme cheese, shredded cheese and ranch seasoning mix.  Gradually stir in beer until it blends consistency.  Sve with chips, pretzels, or vegetables.  Cheers !!!
